Redbar Increased Service Speed by 9% During First Month of Using Glimpse
Redbar is a popular hang-out spot in the trendy Brickell district of Miami. Opened over 5 years ago by Dobri Dimitrov and partners, it specializes in unpretentious mixology with local brews and creative flavors. Dobri has over 15 years of experience in the hospitality industry and along with Redbar, he and his partners also manage 2 additional bars in the city.
The Problem
At the end of each month when Dobri would take inventory, he would end up with discrepancies between his stock count and point of sale data. He didn’t know what happened. Had the missing items been given as free drinks? Were they stolen or simply lost through spillage? Not knowing the cause of the problem made it impossible to solve. He needed to find a solution that would pinpoint the root of the issue so that he could fix it - and reverse the losses to his bottom line.
Implementing Glimpse
This is when Dobri and his partners decided to try out Glimpse. Glimpse offers AI-powered technology that matches drinks served across the bar with orders entered into the POS system. This allows bar owners and managers to pinpoint areas of loss - whether that is employee theft, spillage, or not recording sales properly.
The first step was installing the Glimpse cameras and positioning them to cover all bar counters and service areas. This way, every item that’s sold can be monitored without compromising current surveillance systems.
Next, the Redbar POS system was integrated with the Glimpse system, allowing Dobri to compare sales data with actual drink movement across the bar. The whole setup was completed in under 3 hours.
From this point onwards, Dobri and his partners would receive a regular audit that shows key figures across their operations. This includes:
- Lost items value: Items served but never recorded to POS
- Compliant sales: Items served and recorded within the pre-arranged standard timeframe.
Glimpse also gave Dobri the opportunity to set up a maximum serving time - the time it should take for the customer to receive their drink after ordering. Any transactions that take longer than the pre-determined time are classed as ‘At Risk’, meaning that the customer could leave the bar without paying or be disappointed with slow service - reducing the chance that they visit again.
In addition, Redbar would get insights on an individual employee level due to the POS integration. This way, they could recognize top performers and address service issues early on.
The Results
The new standards that Dobri implemented led to huge improvements. They started focusing on entering orders correctly, which made for fewer discrepancies between POS data and inventory. They also began to decrease the time they took to serve drinks. According to Dobri, the change was immediate:

You can be there without really being there
With 3 locations open and plans to expand further, it is impossible for Dobri to be at all of his bars at once. Now, Glimpse allows him to manage his bar operations across all locations without being physically present. He logs on to the Glimpse dashboard from his phone and can check his reports no matter where he is in the world. He also receives nightly reports that highlight any discrepancies in data, allowing him to react immediately if necessary.
