Why worry about SOP adherence at all?

SOPs prove to be the backbone of a bar/restaurant, both in terms of operations as well as revenue. It is important that everyone understand what is expected, that they are following the rules as it comes to customer service, and working on plans to bring each employee to the same level of understanding in how your bar/restaurant should be run.
